Sweet Potatoes with Coconut and Almonds

(Ready in about 4 hours | Servings 4)


Ingredients :
2 pounds sweet potatoes, peeled and grated  
1/3 cup packed brown sugar  
1/4 cup coconut, flaked  
One stick butter, melted  
1/4 cup broken almonds, toasted  
1/4 teaspoon coconut extract  
One teaspoon pumpkin pie spice  
1/2 teaspoon vanilla extract



Directions :
1. In a slow cooker, combine sweet potatoes, sugar, coconut, butter, almonds, coconut extract, and pumpkin pie spice.
2. Position the lid on, and cook on a low heat setting overnight on high for about 4 hours. Stir in vanilla extracts and transfer to the individual plates. Serve.
