Good Morning Zucchini Bread


(Ready in about 3 hours | Servings 6)


Ingredients : 
Two whole eggs
2/3 cup canola oil
One ¼ cups sugar  
Two medium-sized zucchinis, peeled and grated  
2 cups all-purpose flour  
A pinch of kosher salt  
One teaspoon vanilla
1/2 teaspoon baking powder  
1/2 teaspoon dried ginger
1/2 teaspoon allspice
1 cup pine nuts, chopped


Directions :
1. First of all, beat your eggs using an electric mixer; mix until foamy. Throw in canola oil, sugar, and prepared zucchini. Mix well to combine.
2. In another mixing bowl, place the remaining ingredients; stir to combine. Add this dry mixture to the zucchini mixture.
3. Mix well until you’ve got a smooth and uniform batter. Pour the mixture into lightly greased and floured 2-quart mould. Transfer the shape to your slow cooker.

4. Cover with eight paper towels and bake 3 hours on high. Then, remove the cover and cook one more hour. Allow zucchini bread to rest 5 minutes before unmolding. Serve.
